Big fat coconut chips! I love ‘em because they’re so versatile. I can use them in an impromptu trail mix with nuts and goji berries (shreds and flakes are too small to grab by the handful); add them on top of a yummy dessert like coconut cream pie to make it look STUNNING; or pulse them down finer, if I need smaller flakes or even coconut flour in a jiffy.

One of my fave quickie desserts is to melt a couple tablespoons of coconut oil, stir in cacao, maca, mesquite and lucuma powder until smooth, pour into mini-cup mold and top with big chunks of coconut chips. Pop it in the freezer and voila! Low-sugar, super-easy, coconut-cacao, bite-size treats.

I think Tropical Traditions coconut cream concentrate is the next best thing to fresh coconut! It’s coconut meat dried and ground into a very fine powder, giving it a creamy consistency and high fat content. It retains all the fiber of the coconut, so it is a food and not just an oil. It makes for an especially delicious dessert ingredient that imparts a natural fat and sweetness to make desserts creamy and delicious! But besides desserts like my raw pistachio cardamom burfi (recipe coming this week!)

I like to use coconut cream concentrate in soups to make them thicker and richer. I bet it also makes fabulous ice cream (can’t wait to try it this summer!) It’s so good, I even love it plain off a spoon.

Working with concentrated coconut cream is a bit difficult though, because it solidifies under 75F. To soften it first, I put it in a hot water bath and stir until creamy and well blended. You can watch this video on how to prep coconut cream concentrate. Because it takes a bit of work and prep time, you may want to make bigger batches of your recipe. I don’t mind because I think the extra effort is so worth it!
