I’ve been avoiding gluten, but craving pancakes lately. So I gave it a whirl at making coconut flour pancakes. Oh my, they smelled so good!!

I don’t remember the measurements exactly but it was something like 2 eggs beaten, 1 tablespoon of coconut flour, 1/2 teaspoon baking powder, 2 tsp coconut oil, drop of vanilla whipped together than pan-fried in raw grassfed butter. Something like that. LOL. With a bit of maple syrup, they were totally satisfying…yum.

    Those look good. Yes, coconut flour is quite high in protein, super high in fiber too – good stuff. I love everything coconut. Really had it made on the locavore front when I lived in HI – now I live in Alaska! My ND wants me to eat raw butter, but I have such an aversion to it – can't stand anything about it. So thank goodness for coconut oil…

    Yes – high in fiber too! I find coco flour can be a little dry compared to other flours, so maybe some more coco oil in the batter I'm thinking? Guess I'll have to experiment some more…heehee. Do you have a blog, Ela?
