I think Tropical Traditions coconut cream concentrate is the next best thing to fresh coconut! It’s coconut meat dried and ground into a very fine powder, giving it a creamy consistency and high fat content. It retains all the fiber of the coconut, so it is a food and not just an oil. It makes for an especially delicious dessert ingredient that imparts a natural fat and sweetness to make desserts creamy and delicious! But besides desserts like my raw pistachio cardamom burfi (recipe coming this week!)

I like to use coconut cream concentrate in soups to make them thicker and richer. I bet it also makes fabulous ice cream (can’t wait to try it this summer!) It’s so good, I even love it plain off a spoon.

Working with concentrated coconut cream is a bit difficult though, because it solidifies under 75F. To soften it first, I put it in a hot water bath and stir until creamy and well blended. You can watch this video on how to prep coconut cream concentrate. Because it takes a bit of work and prep time, you may want to make bigger batches of your recipe. I don’t mind because I think the extra effort is so worth it!

    Since going gluten and dairy free coconut has been something I really treasure – I use coconut milk a lot, I love to munch on fresh coconut, drink coconut water, and use shredded coconut in my baking. I've visited the tropical traditions website before b/c I really want to experiment with coconut flour in baking – I haven't bought any yet (I'm a poor grad student) – but it certainly on my wish list of gluten free baking ingredients!
