I just wanted to post a little reminder that the Valentine’s Day Coconut Giveaway ends tomorrow at 11:59pm. A winner will be drawn via random.org. As I write this, there are only 44 entries so there’s a very good chance of winning. And the more you enter, the better your odds!
Here is a Valentine’s Day recipe that you can make with your coconut oil windfall – Raw Walnut Chocolate Bark. The lucuma powder and stevia sweeteners make it low glycemic. The maca powder adds a malty flavor. Maca is an adaptogen, which means it has the ability to balance and stabilize the body’s systems. This recipe is so easy and delicious!
RAW WALNUT CHOCOLATE BARK
1/2 cup coconut oil
2 Tbsp raw cacao powder
1 tsp maca powder (optional)
2 tsp lucuma powder
1/2 tsp stevia
pinch of salt
1/4 cup chopped walnuts
Place coconut oil in double boiler or bain marie to melt. Stir in powders. Mix in stevia & salt to taste. Transfer to a plastic container to coat the bottom. The bark thickness will depend on the container size you chose. Sprinkle in chopped walnuts. Place in freezer for 30 minutes. Remove from freezer, flex plastic container to release & chop into small pieces. Now c’mon, share with others!
