Raw Chocolate Walnut Cookie

Sundays + rain = time to do some unbaking! I was itching for a sweet treat but too lazy to go out, so I started scavenging the cupboards. Cacao, lucuma, almond butter, walnuts, maca – all the makings of a quick yum pot, but I wanted MORE. Something special. A really raw decadent chocolate chip cookie! So I started rifling through my recipes and came across an all-time sure-fire winner – the infamous chocolate chunk walnut cookie from Sweet Gratitude. They came out AMAZING!

Now this ain’t one of your lickity-split, easy peasy raw recipes. It takes time and a whole lot of willpower to keep from inhaling all the cookie dough. You could cut corners and use cacao nibs for chips, but it’s the raw cacao fudge chips that make this cookie a stand-out!

Now it’s Monday afternoon and they’re even better because I let them dehydrate the full 24 hours. Rich choccie cookies and a hot cuppa for dunking – heaven!

  • I totally wing it too...as in always. Yesterday I followed a book and the net result is a little runnier than I'd prefer which is ironic b/c when I just wing it, things usually pan out just fine...we're the same :)

    and do you have any faves or ever made anything from My Sweet Vegan the cookbook by Hannah Kaminsky? Or do you enjoy the book you linked here, Sweet Gratittude? Normally i am just a raw throw it together, no recipe, kinda girl, but sometimes a few books are nice :)

    Thanks for the tip on My Sweet Vegan - haven't read it yet. Funny thing is,
    I love reading/saving recipes but I'm usually too lazy to follow one - lol.
    For dessert, I usually just wing it and make quick yumpots for myself - i.e.
    almond butter mixed with some superfoods like maca, cacao, lucuma - eaten
    off the spoon like fudge. ;D For gourmet raw desserts though (for like a
    potluck or family) I will follow Sweet Gratitude just to be safe since my
    palate is a bit raw-ified - LOL.
